Chocolate Crunch Bars

These bars are so easy to make with ONLY 3 ingredients. I love how these are made with chickpeas giving you the extra protein to keep your insulin levels more stable. You can add any other toppings to this to make it your own!

Chocolate Crunch Bars
Ingredients:
- 1 can chickpeas
- 2 cups chocolate chips
- 1 tsp coconut oil
- unsweetened shredded coconut (optional)
Instructions:
Preheat the oven to 425ºF and line a large baking sheet with parchment paper.
Drain and wash the chickpeas. Transfer the dried chickpeas to the baking sheet. Roast the chickpeas for 20 to 30 minutes, or until golden brown and crisp. Ovens can vary, if your chickpeas are not crispy enough, keep going until they are.
While the chickpeas are roasting, melt your chocolate in the microwave or on the stove. Then add the coconut oil to the melted chocolate.
Once the chickpeas are done, add them to the melted chocolate and mix until all are coated.
Line a loaf pan with parchment paper and pour the mixture into the pan. Sprinkle the shredded coconut on top. Let harden, I like to put it in the freezer for extra crunch! Cut it into pieces and enjoy.
