Blueberry Chia Pudding

I have been a little obsessed over chia pudding lately... I mean who isn't!? It's SO easy to make and SO good for you. Not only are they great for cleaning out your body but also a beauty superfood!

Ingredients:


Serves 3-4 people


Chia pudding:

- 2 cups oat milk

- 8 tablespoons chia seeds

- 3 tablespoons honey (or to taste)

- 3 teaspoon vanilla extract


Blueberry Sauce:

- 1 1/2 cups fresh blueberries

- 2 tablespoons water

- 1 teaspoon vanilla extract

- 1/4 teaspoon lemon zest

- 1 1/2 teaspoon honey (or to taste)


Instructions:

  1. Make the blueberry sauce: Add in all the ingredients for the blueberry sauce in a small saucepan and heat it at medium low heat for 15 mins or until it becomes a bit thicker and warm. I like to squish some blueberries to make the sauce thicker.

  2. Make the chia pudding: In a bowl, combine all the ingredients for the chia pudding and mix well. Mix until fully combined and let it sit for a few hours or overnight. Stir the pudding a few times while it's setting so all the chia seeds gets combined and there are no clumps.

  3. Assemble the pudding: Once the chia seeds are set and the mixture is firm, its time to serve the pudding! Get a serving bowl or cup and start by adding the chia pudding first, then add the blueberry sauce on top, and enjoy!
