Easy Paleo Caramel Sauce (PCOS Friendly)

Healthy caramel sauce is easier than you think it is to make. And it tastes just like the real thing! This recipe is dairy and refined sugar free, meaning that it won't spike your glucose levels as much and be better for inflammation in the body. This recipe is from Living Healthy with Chocolate.

Instructions:

  1. Bring the water and coconut sugar to a light boil in a medium saucepan, stirring the mixture constantly over medium heat.

  2. Add the coconut milk, vanilla, and salt. Cook for about 15 minutes over medium heat, stirring constantly so that it doesn't burn. When the mixture starts to thicken and turn darker in colour it's ready. Set aside to cool and store it in a airtight container in the fridge.

* If the sauce ended up thicker than you wanted then just add some more water little by little until you have the consistency you want. If you want the sauce thicker, then just return the sauce to the pan and cook it for a bit longer until you have the consistency you want.
