Easy Strawberry + Cream Chia Seed Pudding

Chia seeds are one of the most powerful superfoods out there. One serving of chia seeds contains more calcium than milk, more antioxidants than blueberries and three times more iron than spinach. It also has a great source of protein, fiber, and omega-3 fatty acids which all are essential components for a quicker metabolism.

Ingredients:
- 1/2 cup of oat milk
- 2 tablespoons chia seeds
- 1 1/2 tablespoons honey (divided)
- 1 teaspoon vanilla extract
- 1 teaspoon collagen (I used Better than Botox plant Collagen)
- 5 strawberries
Instructions:
In a small bowl, combine the oat milk, chia seeds, 1 tablespoon of honey, vanilla extract, and collagen. Mix until fully combined and let it sit for a few hours or overnight.
Use another small bowl and add the strawberries and the 1/2 tablespoon of honey and mash together until it's almost a puree.
Once the chia seeds have set and is firm, take a cup and add the strawberry mixture and then layer the chia seed pudding on top.
Add more strawberries and/or chia seeds on top and enjoy!
