Vegan Nacho Cheese

Ingredients:

2 cups raw cashews

3 tablespoons lemon juice (usually 1 lemon)

4 cups water (use more if needed to thin)

1/2 cup of nutritional yeast

1/2 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder

2-3 teaspoons salt, or to taste

1-2 teaspoons Sriracha, or to taste

1/2 teaspoon turmeric

1-2 green chopped chili peppers (optional)

1-2 teaspoon avocado oil (optional)


Instructions:

1. Boil water in a kettle or on the stovetop, cover the cashews with boiling water and set aside for 10 mins. Drain.

2. In a blender, add the cashews, lemon juice, 3 cups of the water, nutritional yeast, smoked paprika, garlic powder, onion powder, chili powder, salt and turmeric. You can add more turmeric to make the cheese more yellow/orange.

3. Add the cheese sauce from the blender into a saucepan on the stovetop. Use a whisk and warm the sauce over medium heat. Whisk constantly until it starts to bubble and becomes thicker. You can add the rest of the water to the sauce depending on how thick/thin you want it to be. OPTIONAL: Before adding the cheese sauce to the saucepan, heat the oil in the pan and add the chopped green chili peppers and cook for 1-2 minutes.

4. Now add any more salt and the Sriracha to taste. This can be served with nachos, broccoli, tacos and more! To reheat: Heat over the stovetop and add more water, whisk.
